Wild Chicory: How to Identify This Blue Roadside Flower and the Story Behind Chicory Coffee

A Blue Flower Beside the Parking Lot

My husband recently had knee replacement surgery, so physical therapy has become part of our regular routine. One day, while I was waiting for him during an appointment, I walked toward one side of the parking lot. Beyond the pavement, near a busy road, a flash of blue-violet caught my eye.

The flowers were unlike most of the summer wildflowers around them. Their color was soft but vivid, somewhere between clear sky blue and lavender. They grew on stiff, branching stems among dry grasses and other roadside plants. I stopped immediately and wondered, Could this be chicory?

After looking closely at the flowers, stems, and growing habit, I confirmed that it was wild chicory (Cichorium intybus), a member of the aster family. I had seen chicory in books and photographs, but this was the first time I had noticed it growing in person.

I photographed and filmed it, but I did not harvest any. The plants were beside a parking lot and a well-traveled road, where soil and vegetation may be exposed to vehicle residue, runoff, herbicides, pet waste, and other contaminants. A plant can be edible and still grow in a place that is not suitable for gathering food.

What Is Wild Chicory?

Wild chicory is an herbaceous biennial or perennial that grows from a deep taproot. Its accepted scientific name is Cichorium intybus. It is native across a broad region from Europe into western and central Asia and North Africa, but it has been introduced and naturalized in many other parts of the world, including Washington State.

In Washington, the Burke Herbarium reports chicory on both sides of the Cascade crest. It is most often found in sunny, open, disturbed places such as roadsides, fields, ditches, vacant lots, and waste ground from low to middle elevations. It generally flowers here from July through October.

That habitat helps explain why I had not found it on our mountain property. Our land is cooler, shadier, and mostly forested. Chicory prefers abundant sun and disturbed ground, so the type of habitat may matter more than elevation alone.

How to Identify Wild Chicory

The blue-violet flowers are the first feature most people notice, but flower color alone is never enough for a confident identification. Look for several characteristics together:

  • The flower heads are usually blue to blue-violet and can reach about 1½ inches (4 cm) across.

  • Each head is made entirely of strap-shaped florets rather than a central disk surrounded by rays.

  • The end of each floret has five tiny teeth.

  • Flower heads often sit almost directly against stiff, wiry, branching stems, singly or in small groups near the upper leaves.

  • Upper leaves are small, sparse, and may clasp the stem.

  • Lower leaves form a larger toothed or lobed rosette that can resemble dandelion leaves.

  • Broken stems and roots release a milky sap.

  • The plant grows from a strong, deep taproot.

Because I left these roadside plants undisturbed, I did not dig up a root or cut a stem to show the milky sap. That is why it is useful to combine visible features—the flowers, their position on the branches, the sparse upper leaves, and the plant’s overall form—rather than depending on a single clue.

The Edible Side of Chicory

Chicory has a long food history. Young leaves can be eaten raw or cooked, although their natural bitterness becomes stronger as the plant matures. Cultivated forms of the same species gave us familiar vegetables such as radicchio, Belgian endive, and root chicory.

The root is the part that became famous as a coffee substitute. After it is cleaned, chopped, dried, and roasted, it develops a dark color and a deep roasted flavor. The roasted pieces can then be ground and brewed by themselves or mixed with coffee.

Pure roasted chicory root contains no caffeine. However, a package labeled “coffee with chicory” still contains caffeine unless it is made entirely from chicory or specifically says it is decaffeinated. Chicory also does not taste exactly like coffee. It is earthy, toasted, and pleasantly bitter, with flavors sometimes described as nutty, woody, or caramel-like.

When and Where Did Chicory Become a Coffee Substitute?

Roasted chicory root was used as a coffee substitute in Europe centuries ago. A scholarly review of chicory root history notes its use in this way from at least the late sixteenth century. Its popularity increased during periods when imported coffee was expensive, restricted, or difficult to obtain.

It became especially important in France during the Napoleonic era in the early 1800s. Wartime trade disruptions and the Continental Blockade reduced access to coffee, so roasted chicory root was brewed alone or blended with the coffee that remained. People discovered that it did more than simply stretch the supply: it added darker color, body, bitterness, and its own roasted flavor.

Chicory later became deeply connected with New Orleans coffee culture. During the American Civil War, the Union naval blockade restricted coffee shipments into the South. New Orleanians used roasted chicory to extend scarce coffee, building on a custom already familiar through French food traditions. The blend remained popular even after coffee became readily available again. Today, New Orleans-style café au lait made with coffee and chicory—and often enjoyed with beignets—is one of the best-known surviving examples of that history.

Chicory beverages also appeared in other parts of Europe during later wars, rationing, and economic hardship. What began as a practical response to shortage became a lasting taste preference in several regions.

What Does Research Say About Chicory Root?

Chicory root is one of the best-known natural sources of inulin, a fermentable soluble fiber. Inulin passes through the upper digestive tract and is used by certain bacteria in the colon, which is why it is commonly described as a prebiotic fiber.

Human studies using measured amounts of purified or food-grade chicory inulin have reported increases in beneficial Bifidobacterium and improvements in stool frequency in some participants, including people with low stool frequency or constipation. This supports chicory root’s reputation as a fiber-rich food ingredient.

However, those studies do not prove that a homemade cup of roasted wild chicory root will produce the same result. The quantity of inulin varies by plant, harvest time, preparation, roasting temperature, and serving size. A filtered beverage may also contain much less fiber than eating the root or consuming a standardized inulin product. It is more accurate to say that chicory root contains a well-studied prebiotic fiber than to claim that chicory coffee treats digestive disease.

Inulin can cause gas, bloating, or abdominal discomfort, especially when a person consumes a large amount suddenly. Chicory may also cause allergic reactions in sensitive individuals, including some people with allergies to other plants in the aster family. Anyone with a medical condition, significant food allergies, or questions about using concentrated chicory products should speak with a qualified healthcare professional.

Why I Left This Chicory Untouched

Finding an edible plant does not automatically make it a harvest. Location matters just as much as identification.

These chicory plants were growing where vehicle residue, parking-lot runoff, road dust, herbicides, and animal waste could reach them. I also did not know the property’s spraying history or whether gathering was permitted. For those reasons, the safest and most respectful choice was to leave the plants exactly where they were and bring home only photographs and video.

If I ever prepare chicory root, I would rather use a cultivated plant or one growing in clean, unsprayed soil well away from traffic—with permission to harvest and only after confirming every identification feature.

⚠️ Foraging Safety

Never eat or brew any wild plant unless you are completely certain of its identity. Confirm the entire plant, not only the flower. Check land ownership, obtain permission where required, and follow all local regulations. Avoid roadsides, parking lots, industrial areas, chemically treated ground, and places affected by contaminated runoff. When in doubt, leave the plant untouched.
